Guacamole

Not Spanish in origin but makes a fantastic tapas to go with bread, bread sticks, tortilla chips and looks great in the displayed dish!

Ingredients

2 ripe avocados
2 slices of a ripe tomatoes 
2 thin slices of onion
Half teaspoon Cumin powder
Pinch of salt
Juice of half a lemon
Finely chopped coriander (teaspoon sized)

Method

Finely chop the tomato slices and onion, place in a bowl and mash a little with a fork or better still a mortar and pestle if you have one.

Cut the avocados in half and remove the stone and scoop out the fruit in to the bowl with the tomatoes and onion.

Add the cumin, salt, coriander and lemon juice then mash together until it becomes a fairly smooth paste.

Empty in to your chosen serving bowl and enjoy with some tortilla chips, bread and tomato etc
